- 3/4 lb. Lobster Meat
- 2 egg yolks
- 1/2 cup heavy cream
- 1/4 cup butter
- 2 Tbsp. dry sherry
- 1/2 tsp. salt
- 1 pinch cayenne pepper
- 1 pinch nutmeg
Break Lobster meat into chunks.
• In a small bowl whisk together yolks and cream until well blended.
• Melt butter in a saucepan over low heat. Add egg yolk mixture and sherry. Cook, stirring constantly until mixture thickens. Do not boil.
• Remove from heat and season with pepper, salt and nutmeg. Add Lobster to pan and cook over low heat until thoroughly heated. Serve hot over pieces of buttered toast..
