Ingredients

    cups flour

  • 1 1/2

    cups salad oil

  • 4

    eggs

  • 2

    teaspoons baking soda

  • 2

    teaspoons baking powder

  • 2

    teaspoons cinnamon

  • 2

    cups flour

  • 1

    teaspoon salt

  • 1

    cup chopped pecans

  • 3

    cups grated carrots

  • Icing:

  • 1

    box powdered sugar

  • 8

    ounces cream cheese

  • 1/2

    stick butter

  • 1 1/2

    teaspoons lemon extract

Directions

Heat oven to 325 degrees. Grease and flour 9 x 13 baking dish. Mix sugar and oil together. Add eggs and mix well. Combine dry ingredients and add to batter. Mix until smooth. Add pecans and carrots. Pour into prepared pan and bake 50 - 60 minutes. Blend frosting ingredients and spread on cooled cake. Note: May use 3 - 8" layer pans. Bake 30 minutes. Note: May use bundt pan. Bake 1 hour.
