Cranberry Bread

Ingredients
- 1 1/4 cup all-purpose flour
- 1 cup sugar
- 3/4 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp orange zest
- 2/3 cup orange juice
- 3 TBL light stick butter, melted
- 1/4 cup fat-free egg substitute
- 1 cup fresh cranberries, coarsely chopped
- 1/2 cup each dried cranberries and golden raisins

Preparation
Step 1
Preheat oven to 350. Spray a 5 x 9 loaf pan with nonstick spray.
Mix flours, sugar, baking powder, salt and baking soda in a bowl. Mix orange zest, orange juice, butter and egg substitute in another bowl.
Add the orange mixture to the flour mixture; stir just until blended. Add cranberries and raisins; stir just to mix.
Scrape the batter into the pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour. Let cool in the pan 10 minutes. Unmold the bread; let cool on a rack.
