Tuna Bake

Not your conventional tuna casserole! I cut this out from a magazine many years ago. Don't recall the source but it is a delicious recipe.

Ingredients
- 1 can (10 3/4 oz) condensed cream of celery soup
- 3 eggs, beaten
- 1 can (about 6 12 oz) tuna, drained
- 1/4 C chopped pimiento
- 1 1/2 C biscuit mix
- 1/3 C very hot water
- 1 C shredded Monterey Jack cheese

Preparation
Step 1
In a bowl, stir soup, eggs, tuna and pimiento; set asice.
Mix well biscuit mix and hot water. Knead dough on floured surface until smooth.
Press dough into bottom and up sides of greased 10X6 inch baking dish.
Sprinkle 1/2 C cheese on dough.
Add tuna mixture; top with remaining cheese; garnish with additional pimiento.
Bake at 350 deg. F for 50 min. or until center is set.
Cool for 10 minutes
Serve warm.
