Roasted Sage Potatoes

Ingredients
- 8-10 small red potatoes
- ( 1" or 1.5" diameter )
- 2 Tablespoons olive oil
- 30-40 fresh sage leaves
- 2 teaspoons fine sea salt
- 9 x13" baking dish or 12" gratin dish

Preparation
Step 1
Preheat oven to 425 degrees. Scrub and dry the potatoes. Using a pastry brush, spread olive oil in bottom of baking dish. Arrange sage leaves atop oil ( don't overlap.) Sprinkle leaves with sea salt. Cut potatoes in half, and lay cut-side down atop the sage leaves. Bake about 35-40 minutes, until potatoes are tender and the bottoms are crusty. Serve potatoes in their baking dish : sage leaves will stick to bottom sides of potatoes but will lift off easily : the sage leaves are akin to salted potato chips.
