Salmon-Dill Cakes

Ingredients
- 1 (15 oz) can boneless skinless salmon, drained and flaked
- 2 large eggs, lightly beaten
- 1 tbsp chopped fresh dill
- 1 1/2 tsp Old Bay seasoning
- 1 cup fresh bread crumbs (about 2 white bread slices)
- 2/3 cup finely crushed small buttery crackers
- 1/4 cup canola oil

Preparation
Step 1
In a medium bowl, combine salmon, eggs, dill, and seasoning. Stir in bread crumbs; let stand 5 minutes. In a shallow bowl, place cracker crumbs. Using hands dipped in water, shape salmon mixture into 8 patties. Lightly dredge patties in cracker crumbs.
In a large nonstick skillet, heat oil over medium heat. Add patties, and cook for 2 to 3 minutes on each side, or until golden brown.
