Cream of Mushroom Soup
- 4 tbs butter
- 1/2 c. chopped onions
- 2 garlic cloves, minced
- 4 1/2 c. fresh mushrooms, chopped
- 2 c. chicken broth
- 2 c. milk
- salt to taste
- garnish with chives or minced parsley
Preparation time 5mins
Cooking time 25mins
Saute onions and garlic in butter. Add mushrooms and saute about 10 minutes, until they begin to lose their juice. Add broth, bring to a boil and remove from heat.
Blend flour into milk until smooth. Add to vegetable mixture return to heat and bring to a gentle boil, reduce heat and stir constantly until thickened. For a more favorable soup puree soup with immersion blender.
season with salt to taste. Garnish with chives or minced parsley.
