No Mayo Egg Salad

Substituting Greek yogurt for the mayonnaise add extra probiotics, calcium, and protein! Almost forgot to add - it tastes amazing!

- 4 hard boiled eggs, diced
- 1 tablespoon Dijon mustard
- 1 teaspoon ground paprika
- 1 tablespoon chives, chopped, optional
- 3 tablespoons Greek yogurt
- Salt and pepper, to taste

Step 1
In a bowl, combine all ingredients and mix thoroughly. Add salt and pepper to taste. Cover and refrigerate.
FOR LUNCH: pack with crackers, make into a sandwich, or a wrap.
