Ingredients

  • 2 TBS butter
  • 1 cup chopped onions
  • 1/2 lb fresh mushrooms, sliced
  • 1 tsp fresh dill, chopped
  • 1 1/2 tsp paprika
  • 1 1/2 tsp soy sauce
  • 1 cup chicken broth
  • 1/2 cup milk (whole)
  • 5 tsp flour
  • 1/2 tsp salt
  • Ground black pepper to taste
  • 1 tsp lemon juice
  • 2 TBS fresh parsley, chopped
  • 1/4 cup sour cream

Preparation

Step 1

1. Melt butter in a large pot over medium heat. Saute onions in butter for 5 minutes. Add mushrooms and saute for 5 more minutes. Stir in dill, paprika, soy sauce, and broth. Reduce heat to low, cover, and simmer for 15 minutes.

2. In a separate small bowl, whisk milk and flour together. Pour mixture into soup and stir well to blend. Cover and simmer for 15 more minutes, stirring occasionally.

3. Stir in salt, pepper, lemon juice, parsley, and sour cream. Mix together and allow to heat through over low heat, about 3-5 minutes. Do not boil!

4. Serve immediately, with a parsley garnish.

Serves 2. 5 Weight Watchers points per serving.
