French Toast with Apple Custard Sauce

  • 1 cup milk
  • 2 eggs
  • 2 tblsp sugar
  • Pinch of salt
  • 1/2 cup applesauce
  • 1 tsp minced lemon zest

Preparation

Step 1

Heat milk in top of double boiler over gently simmering water until small bubbles form around edge. Combihe eggs, sugar, vanilla and salt in mixing bowl and beat well. Slowly whisk milk into egg mixture, beating constantly until well blended. Return to double boiler and continue cooking over low heat until sauce is thickened. Stir in applesauce and zest and heat through.
