Ingredients
- 1-1/2 pounds boneless top beef sirloin, cut into 2x3/4x1/4 inch strips
- 2 tablespoons all-purpose flour
- 1 tablespoon unsalted butter
- 1/2 pound mushrooms, sliced
- 2 large onions, sliced
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon Dijon mustard
- 2 plum tomatoes, chopped
- 1 cup beef broth
- 3/4 cup reduced-fat sour cream
- Cooked egg noodles, optional

Preparation
Step 1
Toss beef with flour; set aside. Melt butter in a large, deep, nonstick skillet over medium-high heat. Add mushrooms and onions; cook, stiring occasionally, about 10 inutes or until onion is soft. Season with salt and pepper. Add beef and cook, stiring, for 1 minute.
Stir in mustard, tomatoes and broth. Cover, reduce heat to medium; cook 5 minutes or until beef is cook. Stir in sour cream; serve with noodles, if desired.
