Roasted Brussels Sprouts with Garlic Aioli

Ingredients

  • For Brussels Sprouts:
  • 20 brussels sprouts cut into wedges, about 1 lb bag
  • 3-4 tbs oil
  • salt and pepper
  • For Aioli:
  • 6 tbs mayonnaise
  • 1/4 tsp garlic, minced
  • 1 tsp lemon juice
  • 1 tbs flat leaf parsley, chopped fine

Step 1

Place brussels sprouts on baking sheet and drizzle with oil. Sprinkle with salt and pepper. Mix around brussels sprouts on pan to ensure that they all get nicely coated in oil. Bake for 15-20 mins or until golden brown. Flip brussels sprouts with spatula a couple times during cooking. In meantime, mix together mayo, garlic, parsley, and lemon juice. After 15-20 mins remove from oven and let cool for 5 mins before transferring to plate. Place ramekin of aioli on plate and surround with brussels sprouts.
