Caramelized Apples and Sweet Cream Ice Cream with a side of Sugar Cookie

Ingredients

  • 7 Golden Delicious apples
  • 1/4 cup salted butter
  • 2 tbsp lemon juice
  • 2/3 cup sugar
  • 4 Sugar cookies
  • 1 quart sweet cream ice cream

Step 1

•Juice lemon into a bowl. Peal and core apples, then cut in half and half again. Slice the apples one more time in quarters. You should have 8 slices from one apple.
•Put apples in bowl with lemon juice to prevent browning. Add sugar making sure to evenly coat all of them.
•In a skillet melt butter on medium heat, then add the apples and cook 2 minutes.
•Reduce heat to simmer and cook 7 minutes with the lid on. Watch carefully so as not to burn, this will alter the flavor greatly.
•Take off heat and strain apples but save the juice. Re-add the juice to the pan and cook 5 additional minutes on medium low to help caramelize the sauce.
•Pour the juice over the apples let cool 5 minutes so it will not melt the ice cream.
•Scoop 3 scoops ice cream into 4 separate bowls and evenly pour apple mixture on to each. Serve with a sugar cookie.
