Ingredients
- Pasta:
- 1 pound box penne pasta - cooked
- 2 - 14 oz. cans chopped tomatoes
- 1 cup of 1/2 inch cubed mozzerella cheese
- 1 small cucumber, peeled and chopped
- 1 cup green onions, chopped
- Sauce:
- 3/4 cup extra virgin olive oil
- 1 tablespoon chopped garlic
- 1 teaspoon crushed red pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt

Preparation
Step 1
1. Cook pasta 10-12 minutes
2. Combine the first 5 ingredients in a bowl
3. Whisk together the remaining ingredients. Pour over salad. Chill 1 hour before serving.
