Cucumber Margaritas

Ingredients

  • 3 C thinly sliced, peeled, seeded cucumber (1 large or 2 standard)
  • 1 1/2 C silver agave tequila
  • 1 C fresh lime juice
  • 1 C Lime Simple Syrup
  • lime half
  • coarse salt
  • 6 - 7 C ice cubes, crushed
  • cucumber slices for garnish

Step 1

Make the base in a blender. Combine cucumber, tequila, lime juice and simple syrup. Blend until smooth as possible. Strain into a pitcher. Cover and refrigerate until chilled, about 1 hour.

Moisten the rims of 3 6-oz martini glasses with the cut side of the lime half. Spread coarse salt on small plate, then upend the glasses into the salt to crust the rims.

Fill cocktail shaker 3/4 full with ice, then add 1.5 C base. Cover and shake for 10 - 15 seconds. Strain into the salted martini glasses.

Garnish with cucumber slices.
