Butternut Squash Soup

Ingredients

  • TOAST:
  • 1 T butter
  • 3 1/2 cubed butter nut squash ( @ 1/1/2 lbs.)
  • 3/4 C chopped carrot
  • 1 C chopped sweet onion
  • 3 cloves minced garlic
  • 2 1/2 C chicken broth
  • 1/4 C half-and-half
  • 1/4 t salt
  • 4 slices French bread
  • 3 oz. thinly sliced Swiss cheese

Preparation

Step 1

Melt butter in large saucepan over med hi heat. Add squash, carrot & onion; sauté for 12 min. Add chicken broth; bring to boil. Cover, reduce heat & simmer 30 min. Remove from heat, stir in half-and-half. & salt.

Preheat broiler.

Place soup mixture in blender. Blend until smooth.

Arrange French bread on baking sheet. Broil for 1 min; turn & top evenly with Swiss cheese. Broil for 1 min til bubbly. Serve with soup.
