Twice Baked Sour Cream & Chive Potatoes

Ingredients
- 8 small russet potatoes
- 1 T vegetable oil
- 1 cup sour cream
- 1/4 cup milk
- 3 T butter
- 1/4 cup snipped chives
- coarse salt and pepper

Preparation
Step 1
1/ Preheat oven to 400
2. Rub potatoes with vegetable oil. Place on baking sheet and bake until easily pierced with knife. Let cool slightly.
3. Cut a thin slice lengthwise off the top of each potato and discard. Using spoon, scoop out all but 1/4 inch potato flesh from inside. Transfer to bowl
4. Add sour cream, milk, butter and chives. Mash until combined and season with salt and pepper. Bake until lightly browned on top, 20 min. Serve sprinkled with more chives
