Ingredients
- 1 tablespoon olive oil (divided use)
- 1 teaspoon butter (divided use)
- 4 tilapia fillets (6 ounces each), thawed if frozen
- 1 tablespoon Italian seasoning blend
- 1/2 cup chopped fresh basil
- 12 cherry or grape tomatoes, sliced
- 1/4 cup freshly grated Parmesan cheese

Preparation
Step 1
Heat 1/2 tablespoon oil and 1/2 teaspoon butter in a large skillet over medium heat. Sprinkle fish with Italian seasoning. Place 2 fillets in the hot skillet. Cook 3 minutes. Remove pan from heat and flip fish. Top with half the basil, tomatoes and cheese. Cover pan and return to medium heat. Cook 2 to 3 minutes, or until fish flakes easily with fork. Move everything to a plate and cover to keep warm. Repeat process with remaining fish and other ingredients.
