Ingredients
- Garlic and Chive Sauce:
- 1 pound large scallops
- 2 teaspoons extra virgin olive oil
- 1 teaspoon chopped chives
- 1 1/2 tablespoons minced garlic
- 1 tablespoon fresh lemon juice
- 2 teaspoons extra virgin olive oil
- 3 tablespoons white wine

Preparation
Step 1
1. Lightly spray a large sauté pan with olive oil. Sauté scallops over medium heat until cooked through, about 3 minutes on each side. Do not overcook. Remove and set aside
2. In a small bowl combine chives, garlic, lemon juice, olive oil and white wine.
3. In a saucepan add garlic chive sauce and bring a boil reduce heat to a simmer. Simmer until liquid is reduced by half.
4. Serve 3 scallops with 1 1/2 teaspoons sauce.
