Potato Salad (with Chicken)

Work in progress. Mother made a similar type of salad and I didn't realize that it was made up. I sort of like this because the material looks almost all white, so it's a surprise what you get to put in your mouth. All amounts are to taste. Red potatoes are used because the hold there shape. Chicken is optional. Cubing size is your preference. I sort of like chunkier but if your chicken is dry better use more 'sauce'. The time required is for cooling, the actually cooking time is about 15 minutes + chopping and mixing. 20 minutes at most.

Apparently this should last 4 days minimum in the fridge.. It usual doesn't last that long so I wouldn't know. :) If you put eggs or home made mayo the time will be much less. keep refrigerated and don't let it return to room temperature or it will spoil within a day.

Ingredients

  • 3 lbs of washed remove any sprouts, discard wrinkly or too soft potatoes
  • 1/4 cup of cut celery in cubes
  • 1/4 cup of gherkin pickles (or regular pickles with added sugar)
  • 1-2 breast cubed chicken to taste 1/2" cubes
  • 2 tbls of regular mustard (fancy type is not recommended)
  • 1/4 cup-1/2 of mayonnaise (to wetness/creaminess taste )
  • 1 apple cubed, skin on if you want to be healthier. Looks better without skin.
  • salt pepper to taste. tastes fine without it.

Preparation

Step 1

1. Cut potatoes into 1/2" cubes Skin on cooked to 'fork soft' prepare and cut potatoes to size, boil for 15 minutes, time depends on heat, don't let it fall apart in texture. Drain and let cool in fridge.

2. prepare all the other ingredients except apple, you can let everything cool for an hour in the fridge.
3. I prepare the apple last to prevent browning.
4. Mix everything, place in fridge and wait long enough that the potatoes are not warm.

The goal is to get a balance of the starch, chicken and the crunch of sweetness plus the creaminess.

Substitutes pickles could be halved seedless grapes, raisins, cranberries although I haven't personally tried them.
