Candied Sweet Potatoes

Ingredients

  • 3 pounds sweet potatoes
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 2 tablespoons cornstarch
  • 1-1/3 cup orange juice
  • cinnamon to taste
  • marshmallows

Preparation

Step 1

Bake sweet potatoes at 375 degrees for 1 hour or longer until soft. Pare potatoes and slice or cut into chunks. Put potatoes in buttered casserole dish. Dot 2 tbsp. of butt on top.

Combine 2/3 cup sugar, 2/3 cup brown sugar, 2 Tbsp cornstarch, 1-1/3 cup orange juice and cinnamon and pour over potatoes. Bake at 325 degrees for 45 minutes.

Top with marshmallows for 5 minutes (or until slightly browned.)

Can be made ahead. j Bake and add marshmallows last 5 minutes.
