Ingredients

  • 1 cup all purpose flour
  • 1 egg (slightly beaten)
  • 1/2 t. salt
  • 1 t. baking powder
  • 2 about 2 T. cold water

Step 1

Place flour in medium mixing bowl. Make a well shape in the middle of the flour.
In another bowl beat the egg and add salt and baking powder to the egg.
Pour the egg into the middle of the flour, in the well. Add water as needed to create a dough, but don't add to much because the dough will become sticky. When dough is well blended, remove from the bowl onto a floured surface and knead until dough is not sticky and will be easy to roll out. Divide into 2 parts to make it easier to handle. Roll each portion as thin as possible. Cut into strips about 2" wide and flour the top of the dough. Stack the strips on top of each other and then cut the noodles in desired widths. You will need a very sharp knife. Have extra flour waiting and as you cut the noodles, mix the flour with the noodles so they don't stick to each other. You may allow the noodles the lay on the counter while you create the broth or soup they will go into. Drying a little will not hurt them.
