Ingredients
- Cooking Spray
- 2 cups prechopped onion
- 2 tsp chili powder
- 1 teaspoon ground cumin
- 2 chicken breast
- 1/2 cup water
- 1/2 tsp salt
- 1 (16 0z) can reduced sodium pinto beans, rinsed and drained
- 1 (15 oz) can pumpkin
- 1 (14.5 oz) can fat-free, lower sodium chicken broth
- 1 (14.5 oz) can fire roasted diced tomatoes with garlic

Preparation
Step 1
1. Coat a pan with cooking spray. Add onion, chili powder and cumin; sauté 4 minutes, or until tender. Add to slow cooker.
2. Add chicken and next 6 ingredients. Cover and cook on low 8 hours.
3. Shred chicken with two forks and mix together. Cook another hour.
