Rhubarb Cream Pie

Ingredients

  • 1 pound of Rhubarb, tops removed
  • 1 large egg
  • 1 cup sugar
  • cup all purpose flour + 2 tab.
  • 1 tsp. Vanilla extract
  • 1 unbaked pie shell
  • cup firmly packed brown sugar
  • cup (1 stick) of butter, softened.

Preparation

Step 1

Preheat oven to 400 degrees. Cut rhubarb into 1 inch pieces. In bowl beat egg until frothy. Beat in sugar, vanilla and 2 tab. Flour. Fold in rhubarb.

Spoon mixture into pie shell. In bowl combine remaining flour, light brown sugar and butter until looks like coarse crumbs. Spread evenly over rhubarb. Bake 10 minutes at 400 degrees. Reduce heat and continue cooking at 350 degrees for 35 minutes.
