Ingredients
- 1 cup flour
- 1/2 cup butter
- 1/4 cup sugar
- 1 cup sugar
- 2 eggs, lightly beaten
- 3 tb lemon juice
- 1/2 tsp lemon rind
- 1/4 tsp salt
- 2 tb flour
- 1/2 tsp baking powder

Preparation
Step 1
1) Preheat oven to 325o.
2) Blend 1 cup flour, butter and 1/4 cup sugar and press into a 7x11x1-1/2 inch pan. Bake for 20 minutes, or until the shortbread is lightly browned on top.
3) Mix together the 1 cup sugar, eggs, lemon juice and rind, salt, 2 tb flour, and baking soda. Spread the lemon mixture over the hot shortbread crust, and bake 25 additional minutes at 325o. Remove from oven and cool in the pan. Cut into squares.
