Ingredients
- 1 lb chicken breast tenders cut into 1" pieces
- 2 carrots, thinly sliced
- 8 scallions, sliced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 1 1/2 tsp. dried mint
- 1 1/2 tsp. dried oregano
- 2 bay leaves
- 2 cans (14.5 oz each) low-sodium chicken broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 lemons, juiced

Preparation
Step 1
In saucepan ocated with oilive oil-flavored cooking spray over medium heat, brown chicken on all sides. Add carrots; cook 3 minutes. Add next 6 ingredients; cook 5 minutes; stirring frequently. Add chicken broth; bring to a boil. Reduce heat; simmer 20 minutes. Add chickpeas and lemon juice; cook 5 minutes.
