LIFE-ALTERING LEMON CAKE

Ingredients

  • CAKE:
  • 2 sticks unsalted butter at room temp
  • 2 cups granulated sugar
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 tightly packed TBS grated lemon zest
  • 2 TBS fresh lemon juice
  • ICING:
  • 1 lb confectioner's sugar
  • 1 stick unsalted butter at room temperature
  • 3 tightly packed TBS grated lemon zest
  • 1/2 cup fresh lemon juice

Preparation

Step 1

1. Oven 325 degrees. Grease 10" tube pan
2. In mixing bowl w/ paddle attachment cream the butter and sugar until light and fluffy. Beat in eggs one at a time, blending well after each addition
3. In medium bowl sift together flour, baking soda, and salt. Stir the flour mixture into the egg mixture, alternately with buttermilk, beginning and ending with dry ingredients. Add the lemon zest and lemon juice.
4. Pour the batter into the prepared tube pan. Set the pan on the middle rack of oven and bake for 1 hour and 5", or until the cake pulls away from the sides of the pan and a tester or knife inserted in center comes out clean.
5. Transfer to rack and let cook for 10"
Icing:
1. In medium mixing bowl, cream the butter and sugar thoroughly. Mix in lemon zest and lemon juice. Set aside.
2. Remove the cake from pan and spread the icing onto cake while still warm.
