Ingredients

  • Cake:
  • 1 1/2 cups brown sugar
  • 1 egg
  • 2/3 cup oil
  • 1 cup milk
  • 1 tsp vanilla
  • 2 1/2 cups flour, sifted
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups finely chopped rhubarb
  • 1/2 cup chopped nuts (optional)
  • Topping:
  • 1/3 cup sugar
  • 1 tb. melted butter
  • 1/2 tsp cinnamon

Preparation

Step 1

Combine brown sugar, oil, and egg. Stir in milk and vanilla. Add dry ingredients, mixing well. Pour into well greased and floured 9 x 13 cake pan.

Combine topping ingredients and sprinkle on top of batter in pan.

Bake at 325 degrees for 40 minutes. Do not overbake.

Serve with whipped topping if desired.
