Ingredients
- 1/2 cup packed fresh mint
- 1/2 cup packed basil leaves
- 1 tsp. minced fresh garlic
- 1 1/2 tsp. fresh lemon juice
- 3/4 tsp. salt
- 1/2 tsp. freshly grated lemon zest
- 2 Tbsp. pine nuts, toasted, divided
- 2 Tbsp. olive oil
- 2 cucumbers, sliced
- 1 bunch radishes, sliced

Preparation
Step 1
In food processor, mix first 6 ingredients and 1 Tbsp each, pine nuts and water. Pour in oil; process until smooth. Arrange cucumbers and radishes on plate; drizzle with dressing and sprinkle with remaining 1 Tbsp. pine nuts.
