  • 1/2 C butter, softened
  • 1 1/4 C sugar
  • 2 eggs
  • 1 T grated lemon rind
  • 1 1/2 C flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 C milk
  • 1/4 C lemon juice

Step 1

Grease 8x4 loaf pan; line bottom with parchment paper.

In bowl beat butter with 1 cup of the sugar until fluffy. Beat in eggs, 1 at a time, beating well after each addition. Stir in lemon rind. In separate bowl, combine flour, baking powder and salt; stir into batter alternately with milk, making 3 dry and 2 milk additions. Scrape into prepared pan. Bake in center of 350 oven for about 50 minutes or until cake tester inserted in center comes out clean.

Stir in remaining sugar with lemon juice; pour evenly over loaf. Let cool in pan on rack for 20 minutes. Turn out onto rack, remove paper and let cool completely.
