Cranberry Bread

Ingredients

  • 2 C cranberries, fresh or frozen
  • 1/2 C shortening
  • 3/4 C sugar
  • 1 egg
  • 1/4 C cranberry juice
  • 1 T grated orange rind
  • 1 1/2 C each all-purpose and whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 C buttermilk
  • 1/2 C chopped toasted pecans, optional

Step 1

Grease 9x5x3 loaf pan.

In a saucepan over medium heat cook cranberries, stirring often, for 8 to 10 minutes or until some hafe popped. Let cool.

In bowl, beat shorening with sugar until fluffy. Beat in egg, cranberries, cranberry juice and rind. In separate bowl, combine flour, baking powder, soda and salt. Stir into cranberry mixture alternately with buttermilk. Stir in nuts. Scrape into loaf pan.

Bake in centre of 350 oven for about 65 minutes or until top is golden brown and tester inserted in centre comes out clean. Let cool in pan on rack for 10 mnutes. Turn out onto rack and let cool completely.
