Mashed Potatoe Casserole

Ingredients
- 6 medium baking potatoes (2 pounds.) such as russet, round white or yellow
- Slt
- 2 tablespoons butter or margarine
- 3 green onions, sliced (1 cup)
- 1 or 2 garlic cloves, minced
- 1 (8 ounce) carton sour cream
- 1/4 teaspoon ground white or black pepper
- 4 to 5 tablespoons milk. Snipped fresh parsley (optional)

Preparation
Step 1
If desired, peel potatoes. Quarter potatoes, Cook covered, in boiling salted water for 20 to 25 minutes or until tender. Drain
Meanwhile, melt butter in small skillet. Add green omions and garlic; cook until tender.
Mash draining potatoes with potato masher or beat with electric mixer on low speed. Add onion mixture, sour cream, pepper and salt. Gradually beat in enough milk to make smooth and fluffy. Transfer to a greased 1 quart casserole. Cover and chill up to 24 hours
When ready to bake, preheat oven to 350F. Bake uncovered, for 45 to 50 minutes or until heated though. Sprinkle with parsley
