Ingredients

  • Filling:
  • 2 cups chopped dates
  • 2/3 cup sugar
  • ½ tsp salt
  • 1 cup water
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • ½ cup chopped nuts
  • Cookie Dough:
  • 1 cup butter
  • 1 cup sugar
  • 1 cup lightly packed brown sugar
  • 2 well beaten eggs
  • 1 tsp vanilla
  • 4 cups pre-sifted flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon

Preparation

Step 1

Filling:
1. Cook over medium heat until mixture thickens to
spreading consistency (like jam). Once it boils,
turn it down or else it will spit at you. Remove from
heat.
2. Stir in last two ingredients and then chill.

Cookie Dough:
1. Preheat oven to 400 F.
2. Cream first three ingredients thoroughly.
3. Beat eggs and vanilla until light and fluffy.
4. Sift dry ingredients together and blend into
creamed mixture until well combined. Chill dough
until firm.
5. Divide dough into 3 balls. Roll each to an 8"x12"
rectangle. Spread filling, leaving a ¼" margin.
6. Starting with narrow edge, roll up like jelly rolls.
Wrap securely in waxed paper. Freeze. Slice and
bake 8 - 10 minutes. Cool on wire racks.
