Broccoli soup

Ingredients

  • 1 lb broccoli 2 small to medium sweet potatoes
  • 1 medium carrot
  • 1 medium onion
  • 3 cloves of garlic
  • 1 med jalapeno (omit if you don't like spicy)
  • pinch of salt, tsp of black pepper
  • 1 Tsp grape seed oil
  • 3 cups organic low sodium vegetable broth
  • 1 cup unsweetened almond milk

Preparation

Step 1

1. Cut all veggies into medium chuncks before beginning....

2. Steam broccoli & sweet potato in 2 cups vegetable broth with pinch of salt & black pepper

3. While steaming, saute onion, garlic & jalapeno in grape seed oil

4. When all ingredients are soft, add 1/2 each to a blender with 1/2 cup each veggie broth and almond milk

5. When blended add to pot

6. Repeat step 4 with remaining ingredients, add to pot when blended

7. Bring soup to a boil, then turn down to simmer for 15 minutes.

8. Serve with gluten free crackers or slice of gluten free bread (for dipping)
