Ingredients
- SHRIMP & GRITS CASSEROLE
- 2 cups reduced fat milk
- 3/4 c. chicken broth
- 1 c. uncooked quick cooking grits
- 1/4 tsp. Salt
- 1/2 c. parmesan cheese
- 1 tbs. Butter
- 1 (3oz.) Light cream cheese
- 3 tbs. Parsley
- 1 tbs. Chives
- 1 tbs. Lemon juice
- 3 cloves garlic
- 2 green onions
- 1 2/3 tsp. Thyme
- 2 large egg whites
- 1 tsp. Hot pepper sauce
- 1/4 tsp. Black pepper
- 1 lb. Peeled shrimp
- Preheat oven to 375 degrees

Step 1
Combine milk and chicken broth in saucepan. Bring to a boil. Gradually add grits and salt too pan, stirring constantly with a whisk. Cook 5 minutes or until thick, stirring constantly. Remove from heat. Stir in parm, butter and cream cheese. Stir in parsley and other herbs & lemon juice & eggwhites. Spoon mixture into an 11 x 7 baking dish coated with cooking spray. Lay shrimp on top and back for 25 minutes or until set.
