Chicken & Broccoli Casserole

Ingredients

  • 1/4 c butter
  • 1/4 c sliced gren onion
  • 4 oz proscuitto
  • 14 oz broccoli, thawed, drained
  • 1/2 c chicken broth
  • 2 c chopped chicken
  • 1 can cream of chicken soup
  • 1 c sour cream
  • 2 c shredded mozzarella
  • 1/4 t ground mustard
  • 1/4 t black pepper
  • 1 cup Panko bread crumbs
  • 2 T butter, melted
  • 4 c hot cooked penne noodles

Preparation

Step 1

Preheat oven to 350°. Grease 3 qt baking dish. In a large skillet, melt butter over medium heat. Add onion and proscuitto, cook 5-6 minutes until proscuitto is crispy. Add broccoli and chicken broth. Cook 5 minutes, stirring frequently. Stir in chicken, soup, sour cream, cheese, mustard and pepper. Add noodles; toss. Spoon into dish. Combine bread crumbs and melted butter. Sprinkle on top. Bake 30 minutes.
