Ingredients
- 1 1/2 lbs. green beans, trimmed
- 2 Tbs. mint leaves, sliced
- 2 Tbs. lemon juice
- 1 tsp. grated lemon zest
- 1/2 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 2 Tbs. olive oil
- 4 oz. low-fat feta cheese crumbled

Preparation
Step 1
In large saucepan over high heat, bring 2" salted water to a boil. Add green beans; cook 10 minutes or just until tender. Drain and rinse.
In large bowl, combine mint, lemon juice, lemon zest, salt and pepper. Whisk in olive oil. Add green beans and feta cheese. Toss well to coat.
