Blackberry Meringue Pie

  • 4 Cups of Blackberries
  • 1 Cup of Sugar
  • 1/4 Cup of Tapioca
  • 1/4 tsp of Cinnamon
  • One Prepared Pie Crust
  • Meringue
  • 2 Egg Whites
  • 1/4 Cup of Sugar



Step 1

Mix all ingredients for pie and let sit for 15 minutes.
Cook over medium heat until mixture comes to a full boil.
Remove from heat and cool.
Pour into a Baked Pie Crust.

Combine Meringue ingredients and beat well with mixer until you get high stiff peaks.

Put Meringue over top of pie mixture and bake in pre-heated oven at 425 degrees for 5 minutes.

You can also use Prepared Whipped Cream (Cool Whip) instead of Meringue.
