PORK TENDERLOIN SUPERB (Chere)

Ingredients
- Mustard Sauce:
- 3 to 4 pork tenderloins
- 1/2 cup soy sauce
- 1/2 cup Rye or Bourbon
- 4 tbsp brown sugar
- Dijon mustard
- Toasted sesame seeds
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard (or more, to taste)
- 4 tbsp chopped green onion
- Gingered Jezebel Sauce:
- 2/3 cup pineapple preserves
- 1/3 cup apple jelly
- 2 tbsp horseradish
- 1 tbsp grated fresh ginger
- Juice of 1/2 lemon
- Pepper to taste

Step 1
Trim and clean tenderloins and marinate in a mixture of the soy sauce, whiskey and sugar for 2 to 3 hours. Drain, reserve the marinade, rub with a little Dijon mustard and roll in sesame seeds to coat well. Bake at 375F for 25 to 30 minutes or until tender, basting with the reserved marinade from time to time. To serve, slice thinly on the diagonal and serve with Mustard Sauce. Note - it can be baked in the marinade.
Mustard Sauce:
Blend the sour cream, mayonnaise, Dijon, green onion, lemon and pepper well together. This can be made a day ahead.
Gingered Jezebel Sauce:
In a glass bowl, microwave pineapple preserves and apply jelly on High for 2 minutes or until melted. Stir in remaining ingredients.
