Tropical Citrus-mint Sorbet

Ingredients
- 3 lemons, divided
- 1 cup boiling water
- 1 pkg. (3 oz.) Jell-O Lemon Flavor
- 1/2 cup Kool-aid Lemonade Flavor sugar-sweetened soft drink mix
- 1 1/2 cups coarsely chopped fresh pineapple
- 1/2 cup loosely packed fresh mint, thinly sliced

Preparation
Step 1
Cut lemons in half. Cut 1 lemon half into thin slices. Squeeze enough juice from the remaining lemon halves to measure 1/3 cup.
Add boiling water to gelatin mix in a medium bowl; stir 2 minutes until completely dissolved. Stir in drink mix until dissolved.
Mash pineapple. Add to gelatin mixture with lemon slices, lemon juice and mint; mix well. Pour into 9 inch square pan. Freeze 3 hours or until firm.
Remove dessert from freezer; let stand 5 minutes. Process in food processor or blender until smooth. Transfer to freezer container; freeze 4 hours or until firm.
