Sun Dried Tomato and Feta Cheese Spread

Ingredients

  • 2 sticks cold butter, cut into pieces
  • 12 oz Feta Cheese, cut into pieces
  • 8 oz Cream Cheese, cut into pieces
  • 2 cloves garlic
  • 1 shallot
  • 1/2 cup pine nuts, toasted
  • 1 cup minced sun-dried tomatoes
  • 1 cup pesto
  • White pepper, to taste

Preparation

Step 1

Combine the butter, cheeses, garlic, and shallot thoroughly in a food processor or mixer. Season mixture with white pepper.

Oil a 4 or 5 cup mold (with straight sides) Line with plastic wrap. Layer in the ingredients in this order:

1/2 " pine nuts, then sun-dried tomatoes, pesto, cheese mixture. Repeat until the mold is full -- usually twice or three time if mold is small.

Fold plastic wrap over the top and press gently to compact the layers. Chill until firm -- about 2 hours. Remove from mold by dumping out onto serving plate and removing plastic wrap. Enjoy! Keeps well up to 5 days in advance.
