Preparation
Step 1
1. Trim the ends off of the green beans. Cut into 1 in. (2.5 cm.) long pieces.
2. Heat a large pot of salted water on the stove until it reaches a rolling boil. Use approximately 1 gallon (4 L) for each 1 lb. (500 g).
3. While the water is heating up, prepare a large bowl of ice water and a tray lined with paper towels.
4. Add the green beans to the water once it reaches a rolling boil. Cook for 3 minutes and check for doneness. Once done, immediately drain the green beans in a colander and plunge into the ice water to stop the cooking process. When the green beans are cool, drain the green beans and put on the paper towels to try.
