Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 5 tbls melted butter
  • 1 cup plus 1 tbls sugar
  • 24 ounces cream cheese softened
  • 1 tsp vanilla
  • 1 cup canned pumpkin
  • 3 eggs
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg\1/4 tsp all spice
  • whipped cream

Step 1

For the Crust: Combine the graham cracker crumbs with melted butter and 1 tbls sugar in medium bowl. Stir well enough to coat the crumbs (but not a paste keep it crumbly). Press the crumbs onto the bottom and about 2/3 of the way up the sides of a springform pan. Bake crust for 5 minutes, then set aside until ready.

For the Filling: In a large bowl combine the cream cheese, 1 cup sugar and vanilla. Mix until smooth. Add the pumpkin, eggs, cinnamon, nutmeg and all spice. Continue to beat until smooth and creamy. Pour filling into prepared crust.
Bake for 60-70 minutes.
Remove from oven cool, when room temp put into refridgerator when chilled remove the pan sides.

Optional serve with whipped cream
