Warm Mushroom And Spinach Salad

  • 1 pound fresh white mushrooms or mixed mushrooms (such as portabellas, crimini, and shiitakes, with stems removed)
  • 1/2 cup prepared balsamic salad dressing
  • 1 bag baby spinach - (10 oz)

Step 1

Slice mushrooms or cut large mushroom in chunks. In a microwavable bowl, combine mushrooms and dressing. Cover loosely with waxed paper; microwave on high power for 5 minutes. Let stand for 5 minutes before uncovering.

Meanwhile, on a large platter, arrange spinach; spoon hot mushroom mixture evenly on top; serve immediately.

Alternatively, sauté mushrooms in 2 teaspoons vegetable oil until tender, 5 to 7 minutes. Add dressing to skillet; spoon hot mushroom mixture over spinach.

This recipe yields 4 to 6 servings.
