Cod Fish Stew

Ingredients
- 1 – 1 1/2 lbs. fresh cod fish, preferably thick fillets, cut into large chunk servings
- juice of 1 lemon juice
- 1 c. white wine
- 28 oz. canof chopped plum tomatoes
- 1 T. mixed Italian herbs
- 1 c. chopped celery
- 1 lb. potatoes, cubed
- 1 T. capers
- 1 onion, chopped
- 5 cloves of garlic, chopped
- 1/2 c. pitted kalamata olives
- 1/2 c. chopped fresh parsley
- 1/2 c. olive oil and canola oil mixture

Step 1
1. Heat olive oil and canola oil. Place cut pieces of cod in pan and sauté until lightly browned on both sides.
2. Remove cod from pan and set aside. Place chopped onion in oil mixture in pan and salute a bit, add garlic and salutea bit until both onion and garlic are golden. Slowly add half of wine and scrape up brown bits from the bottom of the pan.
3. Add tomatoes, potatoes, lemon juice, the rest of the wine, olives, capers and celery to mixture in pan. Cook for about 20 to 25 minutes.
4. Add cod into the pan and cook for an additional 15 to 20 minutes. Serve with chopped parsley sprinkled on top.
