Ranch Mashed Potatoes

Ingredients
- 1 package (1-ounce) dry ranch dip mix
- 1/2 cup fully cooked bacon pieces (from a 2.5-ounce package), divided
- 1/2 cup half-and-half
- 1/2 teaspoon black pepper
- 1/4 cup (1/2 stick) butter, melted
- 1/4 cup chopped fresh chives
- 2 1/2 pounds russet potatoes

Preparation
Step 1
1.Peel the potatoes and cut into 2-inch pieces. Place the potatoes in a large saucepan and add enough water to cover. Bring to a boil. Reduce heat and simmer until the potatoes are tender when pierced with a knife, 20–25 minutes. Drain.
2.Place the potatoes in a large bowl and mash with a potato masher until no lumps remain.
3.Stir in the half-and-half, butter, chives, pepper, ranch dip mix and 1/4 cup bacon.
4.Spoon the potatoes into a large serving bowl and top with the remaining bacon.
