Spider Web Chocolate Stout Cupcakes

Ingredients

  • 12 tablespoons unsalted butter, 1 1/2 sticks
  • 1 cup cocoa powder
  • 1 bottle dark stout, such as Guinness, poured and settled before you measure
  • 2 large eggs
  • 1/2 cup Greek yogurt (or heavy cream)
  • 1 1/4 cups unbleached all-purpose flour
  • 1 1/4 cups sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 recipes butter cream frosting, or 1 can frosting
  • Black gel frosting

Preheat the oven to 350°F and place a baking rack in the center of the oven. Line muffin pans with liners.

In a small saucepan over low heat, melt the butter. Remove from the heat, add the cocoa powder, and stir until smooth. Then stir in the stout. Set the butter and aside to cool, about 10 minutes.

In a medium bowl, whisk together the eggs and yogurt/cream. Add the cooled chocolate mixture, incorporating well. Add the flour, sugar, baking soda, and salt, and whisk until smooth, scraping down the bowl as needed.

Fill each prepared muffin cup about 2/3 full. with 1/3 cup batter, about 2/3 full. Bake until a tester inserted in the center of a cupcake comes out clean. (I made mini cupcakes so it only took about 10 minutes). Leave the cupcakes in the pan on a rack to cool for 5 to 10 minutes. Transfer the cupcakes to the wire rack to cool completely before frosting.

For the spiderweb effect: Frost with white frosting. With black gel frosting, draw 3 concentric circles on the top of the cupcake. Using a toothpick or knife end, start from inside the smallest circle, and trace a straight line out to the cupcake's edge. Repeat 4-6 times around the cupcake top.
