Ingredients

  • 3 medium onions
  • 3 bell peppers
  • 2 oz. sun-dried tomatoes in oil, drain
  • 1/2 c olive oil
  • 1/2 c balsamic vinegar
  • 4 cloves garlic, chopped
  • 2 T fresh basil or oregano
  • 1 hot pepper, chopped

Step 1

Remove outer skin from onions & quarter. Wash peppers, then core, seed & quarter them. Finely chop tomatoes. Combine the tomatoes, oil, vinegar, garlic, oregano & hot pepper. Pour this mix over the vegetables, coating well. Place onions & peppers in work and set on hot grill. Roast 20 mins, turning occasionally. Serve immediately as a side dish or over lightly toasted slices of crusty bread.
