Ingredients

  • 1 1/2 c sugar
  • 1/4 c + 2 t cornstarch
  • 1/4 t salt
  • 1/2 c + 1 T lemon juice
  • 5 egg yolks, well beaten
  • 1/2 c cold water
  • 2 T butter
  • 1 1/4 c boiling water
  • yellow food color
  • baked pie shell
  • Lemon Meringue Pie Meringue
  • 5 egg whites
  • 1/2 c + 2 T sugar
  • 1/2 t cream of tartar

Preparation

Step 1

In saucepan combine sugar, salt and cornstarch; add lemon juice then cold water and egg yolks. Add butter and gradually stir in boiling water. Boil stirring constantly. Reduce heat when thickened. Boil for 1 minute. Remove from heat and add color. Pour into shell. Top with meringue and bake at 350 deg. for 12 mins. Cool at room temp.

Meringe recipe follows:
Eggs white should be room temp. Beat until frothy; add cream of tartar and beat at high speed until soft peaks form. Add sugar gradually and continue beating until all sugar is used and egg whites are stiff.
