Easy Shrimp Tacos

Ingredients
- 3 slices pineapple
- 1 c shredded cabbage
- 2 avocados, diced
- 1/2 c chopped cilantro
- 1/3 c lime juice
- 1/4 c olive oil
- 2 T chopped fresh chilies
- 1 T ground cumin
- 2 lbs large shrimp (peeled and deveined)
- salt and pepper to taste
- 12 corn tortillas

Preparation
Step 1
Grill sliced pineapple until golden, 5 mins per side. Then dice and add to a large bowl with cabbage, avocado, cilantro, lime juice, olive oil, chilies and cumin.
Thread shrimp on skewers, drizzle with olive oil and season with salt and pepper. Grill over high heat until charred and golden brown, 3-4 mins per side. Slide shrimp off skewers and into the bowl. Toss well and serve with tortillas, grilled 30 seconds per side.
